Day 11!

Day 11.. we now enter the drudgery time of the 30-day challenge. The initial responses and results we feel seem to have evened out, and the end is NOWHERE in sight!

Who’s got a great recipe that we can all make and rave about? Some totally paleo muffins perhaps? How about someone make this and bring it in for me to eat??

 

Apple “Pumpkin” Pie

Pamela’s Note:  This recipe uses the natural sweetness of the apples and yams to let you have a traditional pumpkin pie without the sugar.

Ingredients – Crust:

  • 1/2 cup coconut flour
  • 1/2 cup almond flour
  • 2 eggs
  • 1/4 cup coconut oil
  • 1/4 tsp salt

Ingredients – Pie Filling:

  • 2 to 3 Apples (We recommend Honeycrisp, since they are on the slightly sweeter side)
  • 1 3/4 cup steamed and pureed yam/sweet potato
  • 1 tsp cinnamon
  • 1/2 tsp ginger
  • 1/4 nutmeg
  • 2 beaten eggs
  • 3/4 cup coconut milk

Directions:

For the crust:  Throughly mix all ingredients together except for the coconut flour. Add the coconut flour in and mix well to form dough. Knead dough for ~1 minute.  Roll dough out between sheets of wax paper until it’s big enough to fit the pie dish. In my experience transferring the pie crust usually results in it falling apart to some extent, so just plan on patching it up a little bit once you’ve transferred it.

For the filling:  Thinly slice, peel and core apples. Coat with cinnamon and stir. Set aside.  In a separate bowl, combine yam, cinnamon, ginger, and nutmeg.  Beat in eggs gently until just combined. Slowly add coconut milk until combined.

Layer apple slices and pumpkin filling in the pie dish. Bake in a 375 oven for 50 minutes or until a knife inserted in the center comes out clean.

    this kale smoothie is saving my life (not a big kale fan but apparently I need to love it to be a real pale kid)

    2 C chopped kale
    1 banana
    1/2 C coconut milk
    1 T flaxseed
    1 T sunbutter

    Made Almond-banana “cake” with my almond flour. It was delicious! Ate it with a bit of organic Apple Butter. I feel like I had dessert!!

        Thank you! I’m going to have to make that Banana Almond Cake and the Apple Pumpkin Pie! I will see how they turn out and bring them in to CFPP :)

    This one of my favorite dishes and easy to make.

    Jerk Chicken
    1 tbsp onion powder
    2 tsp allspice
    1 tsp black pepper
    1 tsp salt
    1/2 tsp nutmeg
    1/4 tsp clove
    4 4 oz chicken breasts
    1 tbsp coconut oil
    1/2 cup chicken broth

    1. Combine first seven ingredients in a large plastic bag. Add chicken and shake until coated in seasoning.

    2. Heat coconut oil in a frying pan over medium heat.

    3. Remove chicken from bag and place in frying pan. Sear for 2-3 minutes on each side.

    4. Reduce heat and add chicken broth. Simmer for additional 15-20 minutes until chicken is cooked through.

    5. Transfer to plate and top with pan juices.

    Made this tonight, so good!!! If you don’t eat honey, you can substitute 2 bananas and a bit of pineapple juice for sweetness. Enjoy!

    1 Cup Almond Meal
    1/2 Cup Coconut Flour
    1 tsp baking powder
    2 Eggs
    1/2 Cup dried shredded Coconut
    1 Cup Coconut Milk
    1 Cup finely cut Walnuts
    1/2 Cup Organic Extra Virgin Coconut Oil
    1/2 Cup Honey
    1 tsp baking powder

    Directions

    Blend together eggs, coconut milk, coconut oil and honey. Combine coconut flour, almond meal, baking powder and shredded coconuts. Combine liquid ingredients and dried ingredients whisk thoroughly into batter until there are no lumps into cake batter. Pour ingredients into greased 9x5x3 inch or smaller loaf pan and bake at (350F) for 40 – 50 minutes. Remove bread from loaf pan and cool on rack.
